Coconut Creamsicle Smoothie

Are your kids excited, anxious or a little bit of both going back to school this year? I was talking to a mom friend of mine who said that as a kid, she couldn’t even eat dinner the night before school and now that she has kids and getting them ready for the first day of school, she finds her stomach all tied up in a knot and not able to eat dinner before their first day of school either!

In addition to getting new school supplies and a new outfit, we made this new Coconut Creamsicle smoothie for back to school morning that I know will be a regular in my household for breakfast, after school snack or even frozen in their lunch bags. You can freeze a batch of this smoothie in PBA Free Silicone Popsicle Molds and put one of the Popsicles in their lunchbox in the morning and it is half thawed and ready to eat at lunchtime

This Coconut Creamsicle Smoothie is hydrating, very filling and will keep kids satisfied until their next meal thereby helping prevent overeating and unwanted weight gain. It contains coconut manna that is a whole food filled full of fiber, protein, and nourishing fats. The milk in this recipe is coconut milk which has shown to improve heart health by lowering cholesterol levels and lowering blood pressure. The orange in this recipe provides a great source of vitamin C. Bananas are a great source of vitamin B6, vitamin C, potassium and manganese and helps metabolize fats and carbs. Hemp seed is high in protein, making this smoothie a complete meal. This smoothie does not contain any refined sugars and optionally uses coconut palm sugar for added sweetness.

This smoothie is dairy-free, nut-free, soy-free, and vegan so a great option for anyone allergic to dairy, nuts, and grains.

Serving: 2 cups

  • 1 tbsp. coconut manna (Nutiva)
  • 1 banana
  • 1 orange
  • 1 tsp. vanilla extract
  • 1 tbsp. coconut palm sugar (optional)
  • 3-4 ice cubes
  • 3 tsp. hemp seeds
