Ingredients
• 1 medium cauliflower
• 1 tbsp. cream cheese
• 1 tbsp. sour cream
• 1 tsp. chicken bouillon
• ½ tsp. salt & pepper
• 1/4 cup shaved parmesean
• 2 ½ tbsp. salted butter
• 2 potatoes (russet or yukon gold)
Directions
- Peel potatoes and chop cauliflower and potatoes.
- Boil veggies until soft.
- In large bowl, add veggies and mash until chunky. If you want a smoother consistency, you can use a food processor until smooth.
- Add remaining ingredients and mix until combined.
