Creamy Cauliflower Mashed Potatoes

Serves: 4
Ingredients
• 1 medium cauliflower
• 1 tbsp. cream cheese
• 1 tbsp. sour cream
• 1 tsp. chicken bouillon
• ½ tsp. salt & pepper
• 1/4 cup shaved parmesean
• 2 ½ tbsp. salted butter
• 2 potatoes (russet or yukon gold)

Directions

  1. Peel potatoes and chop cauliflower and potatoes.
  2. Boil veggies until soft.
  3. In large bowl, add veggies and mash until chunky. If you want a smoother consistency, you can use a food processor until smooth.
  4. Add remaining ingredients and mix until combined.
